You have to remember the average iPhone buyer is not someone who would jailbreak and void their warranty to get all the features the iPhone 3GS has when it is not jailbroken. For instance, video recording; not available on the iPhone 3G unless jailbroken. Average iPhone buyers won't do this, and therefore the extra one hundred dollars or so seems like a "deal."
